À la carte and set menus at the gourmet restaurant Les Orfèvres

Boasting a stunning setting, the gourmet restaurant Les Orfèvres in the city centre of Amiens serves sophisticated and flavourful cuisine: the chef Frédéric Barette gives classic dishes a modern twist, using locally sourced ingredients which have been chosen with the utmost care.

Quality ingredients

The chef is passionate about sourcing ingredients and goes the extra mile to find and showcase the very best produce. From local producers of asparagus and cheese made with ewe’s milk to market gardeners in the Somme, poultry and lamb from the south-west of France and lobsters from the country’s northern coast, the chef is committed to using wonderfully fresh ingredients which serve as inspiration for his gourmet dishes.

Traditional cuisine with a modern twist

Drawing inspiration from the product, the chef pairs classic recipes with modern techniques to produce gourmet dishes which are comforting and balanced. When it comes to cooking, he believes in the importance of simplicity: involving three flavours and five stages of preparation, his cuisine is unpretentious, generous and straightforward. With a judicious combination of gravies, sauces and bouillons, flavours and textures are paired to create just the right balance, showcasing quality ingredients for the ultimate dining experience!

The chef’s signature dishes

The restaurant’s menu pays tribute to local seafood; from June to September, the chef is always delighted to create dishes with scallops and lobsters and knows exactly how to season and cook them for the ultimate results. Another unmissable dish: the chef’s haddock ravioli includes a whole egg yolk, creating an irresistible mix with the haddock butter.

And because they’re the chef’s personal favourite, a selection of pies and pithiviers are also on the menu. Served with seasonal accompaniments, from cabbage to foie gras, pigeon and porcini mushrooms, these traditional dishes are painstakingly prepared and perfectly cooked by the restaurant’s talented chef: the ultimate treat.

The restaurant’s wine list Les Orfèvres

While the gourmet restaurant Les Orfèvres’s wine list features plenty of classics, it also includes an array of unusual and little-known wines which have been chosen for their unique character.

These wines are carefully selected by Pennie, the chef’s wife who welcomes and waits on the restaurant’s diners; she works closely with a sommelier, whose career has included stints at some of France’s finest restaurants, to provide diners with original food and wine pairings. The wine list features bottles which can’t be found elsewhere and are sourced with as much care as the ingredients used in the restaurant’s dishes: whenever he can, the chef travels to meet the men and women who make the wines served in the restaurant’s dining room.
